瑞士-乳酪之鄉Gruyères

地理位置:

進入Fribourg省,過了首城Bulle之後,很快地可以見到Gruyères的路標^^

省道上見位於碧綠山坡上的Gruyères城遠景, 可以想像如此的山境產啥最多?!

Gruyères遠在西元十世就有村落的聚集,住民以遊牧製乳業為生. 後因山居貧困而離鄉到日內瓦湖區平地討生活,因此也把乳酪的製作技術,擴散到目前整個瑞士的法語區.

境內最高山峰-Moléson,是夏日登山、健行、野餐...,冬日滑雪的好地方.
曾經是封建時期伯爵駐守的城中古堡外觀 - 有利的戰略控制位置

城外教堂之一,依常例附設墓園-長眠於此不亦樂乎?!

可以參觀乳酪實際製作過程, 試吃不同月度儲存的格律耶乳酪,還能另體會當牛的生活與樂趣^^,品味不同牧草的芳香,如:榛子、碎木屑、栗子、薄荷、紫羅蘭、....難怪瑞士阿爾卑斯山產的鮮乳及乳酪特別濃香馥郁!

驚訝嗎?一隻牛平均一天能吃100公斤牧草,喝85公升水,產25公升鮮乳?
而圖中每個重35公斤圓盤形Gruyère乳酪,平均要400公升的鮮乳量才能作業.

Cheese is one of Switzerland's culinary specialties, which tourists are sure to enjoy sampling on tours to Switzerland. Extremely popular with the Swiss people, for whom diary farming and cheese making are important traditional occupations, Swiss Cheese is more than just a food item, it is a way of life. Eaten with almost every meal, Swiss cheese is known for its distinctive taste, its characteristic appearance of a yellow slice with holes and its aromatic smell. The holes in Swiss cheese are due to the air that escapes as the cheese is left to ferment and mature. Just like Swiss Chocolate, Swiss cheese too is a product that is exported from Switzerland to delight the palates of food lovers around the world.

What is popularly called Swiss Cheese is known as Emmental Cheese in Switzerland. The most popular cheeses are Emmental, Gruyere, Appenzell and Sprinz. Emmental is characterized by its yellow color, distinctive taste and air holes. It is left to ferment in circular blocks for several months. Gruyere is another cheese with a hard consistency, which is usually fermented for a longer while. There are believed to be 450 different varieties of cheese in Switzerland. You can enjoy tasting the different types of Swiss cheese when you travel with Switzerland.

Swiss cheese is traditionally made in the Alpine region where dairy farming is a hereditary occupation. The ritual of cheese making is a ceremonial one with entire families participating in the cheese making process. Cattle are led to pastures on the Alpine slopes in summer where they feed to their hearts content. The rich creamy milk produced by these well-nourished cows is used to make cheese. These hand made cheeses are shaped into flat round shapes and left to mature. The cheese develops a distinctive flavor as it ripens and delights cheese lovers with its taste, texture and aroma.
